Before you add it, you'll observe nothing, but after addition you might see evolution of carbon dioxide depending on concentration of the acid.
In general, Calcium carbonate is insoluble in water.However, if the water has Carbon dioxide (CO2) in it, Calcium bicarbonate (Ca(HCO3)2) will be created.
Vinegar dissolves the eggshell. Vinegar contains a chemical named Acetic Acid (about 3% of it is acetic acid), among other things. Egg shells contain calcium carbonate.
