You must use white Oak only, as Red Oak is too porous and turns black when wetted regardless of whatever finish you use. Flat lamination is the most stable method of construction. Glue up blanks to desired thickness using 12mm to 19mm pieces, ideally with Resorcinol waterproof glue( or other water resistant glue). When the blanks are dry, you can dress and machine them as necessary. A door manufacturer will generally not provide any warranty for any solid wood door due largely to the temperature variation between the inside and outside on it.
