The cake will not get cooked evenly or well so while cutting the cake will fall flat, because of too much liquid content. You can also cook cheese cake without Sour Cream, or you can also cook cheese cake with sour cream without baking.

That should not happen, and it does not need to happen. This probably occurs because the cake is either too dry, too crumbly / weak, or you are pressing and spreading the icing around too hard.
Too much oil can be just as bad as too little. The excess oil can make contact with the crankshaft and cause cavitation. This will mix air with the oil. This mix creates a froth that is a poor lubricant. Drain out any excess oil.
olive oil In my experience olive oil has too strong a taste for sweets, carrot cake included. I find using canola oil to be better.

Well, possibly nothing. But, that depends on how much of too much. Just a little too much, or say, a litre/ quart too much. If it is really too much, then I would suggest to drain it to the proper level. If too too much, you could have a problem with the seals, due to high pressure leaving the oil no place to move around. The oil will make contact with the crankshaft. This will create a froth of oil mixed with air. This is a poor lubricant and will cause severe engine wear.
