I am not sure why you would convert to Christianity if you do not want to follow the religion, unless you have had a change of heart. In any case, all you need to do is stop attending church, stop any tithes you agreed to make and then simply answer census questions as "No religion". The Christian church can not compel converts to adhere to its teachings or honour previous commitments.
