If you are talking about water particles, then they turn into a gas which evaporation occurs at around 70 degrees. This is the step before condensation which is when water particles after they have turned into a gas, collect on the surface of an object.

They go upwards, because energy is transferred via heat and the molecules start moving around all quick like. If the molecules get enough energy, they can break the surface tension and escape upwards, because heat rises.

There are some particles in a liquid that have enough energy to escape the bonds to the other particles even below boiling point. This means they can move freely and turn into gas particles. The difference between boiling and evaporation is because boiling happens at a certain temperature and evaporation can happen at any temperature below boiling point.

As a liquid evaporates, the molecules (particles) are turning to a vapor, i.e. the intermolecular forces holding the molecules of liquid together are being broken, and allowing the molecules to become a gas. They then move faster, have no or little intermolecular forces of attraction, and expand to occupy the space around them.
