Frying does many things to an egg. First, it coagulates the proteins. The proteins become denatured and stick together, causing the egg to harden and turn opaque. Second, it dehydrates the egg. Frying drives off moisture and makes the egg dryer. Third, it browns the egg. Browning is caused mostly by maillard browning, which is a chemical reaction between sugar and protein. Forth, it increases the fat content of the egg. Fifth, it inactivates microbes and enzymes that may be present in the egg.

This process that you have observed so many dozens of times is called denaturation. The albumen or "white" of an egg is a solution of proteins in water surrounding the yolk of an egg. Proteins are chains of various amino acids. When heat is applied to the white of an egg, the protein chains are broken, and they then recombine in a different order. This stiffens and whitens the albumen of an egg. Also some of the moisture is driven off. The whole process is termed denaturation. The average person prefers to think of it as "cooking."

If a fried egg is over cooked, the white edges will become a bit crisp, and the yolk will be solid much like a hard boiled egg. If a hard boiled egg is over cooked, the yolk inside will get a dark colouring around it.

Either way, the food should still be edible.
