Because of the way the instrument is played. If the instrument uses strings to make its sounds, it's a string instrument. Guitars, violins, bass guitars and pianos are all examples of string instruments. For clarification, the piano is not a "member" of the string family, per se ... rather it belongs with the Percussion family due to the "percussive" manner required to produce sound. It is "associated" with the string family ... For example, if one goes to hear a "String Orchestra" play, one won't necessarily see the piano on stage.
Instruments in the string family include the violin, viola, cello and double bass. A guitar is also a stringed instrument, but is not usually found in orchestras.
There are a great variety of regional and ethnic string instruments. The Bajo Sexto is common in Mexican "Conjuntos", (musical groups). It is a twelve string guitar that is used for both bass and rhythm. Less common is the Bajo Quinto, a ten string version. The Sitar is an Indian stringed instrument that is capable of being custom tuned by way of movable frets. An American standard is of course the Banjo. It is a five string fretted instrument with a stretched drumhead for a resonating device. The sound is distinctively non-sustaining. The plucked notes decay rapidly. This favors rapid fingering and plucking to avoid sounding "unfilled". Have you ever heard a slow banjo? Well maybe Bela Fleck, but he can get away with it.
An Instrument which consists of, usually, metal strings strung out at different tensions which produce differing notes when plucked, these notes can be altered by changing the length of the strings by using the fingers or another tool to press down on a piece of, usually, wood, such as a fretboard on a Guitar or Violin, although not all stringed instruments work in this way, eg. the Harp which doesn't have anything to press down on but consists of a larger number of strings to create different notes, not all instruments that comprise of strings in their makeup are part of the string family, eg. a Piano has strings inside which are hit by small hammers to produce sound, but because of the striking action of the hammers it is considered, by some to, be a percussion instrument.
For the lay person the term string family generally refers specifically to "lute chordophones" - any instrument with strings over a body and neck, as explained above (the violin family, the guitar family, banjos, mandolin, etc.) but any instrument that uses a string as it's primary source of tone production is part of the string family, who's scientific classification is "chordophone". Some people use the term string family to mean the string section of an orchestra, in which case it is only the members of the violin family (violin, viola, cello, bass).
