The name of the eating disorder anorexia nervosa is derived from, like most scientific and medical terms, the old latin language. The part anorexia, on its own also a medical condition simply means a complete loss of appetite, no desire to consume food etc.. I would presume nervosa meant something like 'self induced' or controlled, lack of desire for food. For reasons to maintain thinness or an avoidance of weight gain.
