Typically as a thermostatic controller. Two metals bonded together in a strip will bend one way or the other depending on the temperature. Each metal will expand or contract to a different degree, causing the strip to bend. Using that bending to trip a contact point to start or stop a heating or A/C unit provides an accurate way of controlling environmental temperatures.
