Remember that vegetarianism is exclusive, not inclusive. A vegetarian excludes meat and meat products. A lacto-ovo vegetarian excludes meat products but allows milk and eggs. They don't require milk and eggs in every meal. So a good menu for a lacto-vegetarian would be any meal - literally - that didn't have meat or fish (nothing with a face) in it. That includes meat products (gelatine springs to mind). But you'll be fine if you make any food at all with no dead animals in it.
