Unlike boxes that give you a small amount of your equus back, you get nothing if you destroy a meadow. I would suggest not destroying the meadow, and using it to grow crops, or simply laying it fallow so it can go back to 100% (or 50%) fertility. It doesn't hurt to have to many meadows.
This is what the Howrse E.C. help recommend (The answer was long so I picked what I thought was the most important): To restore fertility, you must let the meadow lie fallow. However, the meadow can only be restored up to its fertility level at the time of purchase. A meadow that was not fertile to start with will therefore never reach 100%.The fertility of a meadow increases by 1% for each day that it lies fallow in spring or fall, by 3% in summer, and by 0.2% in winter. Land that lies fallow in winter will only slightly increase in fertility.

Well, technically you can only plant crops if you have an EC. But here is what you do if you have one: Click on the EC tab Click meadow It should show the meadows that you have for the horses in the EC You have to lay a pasture fallow, and then you can grow crops, but you have to buy fertilizer and the certain crop that you want to grow.
