Actually, you can if you go to the right place; I've had it before though this was many years ago and I don't know whether the shop is even still there or not, but Mr. B's in downtown Branson, MO used to sell it. It's not a common flavor presumably because there's very little perceived market for it. If you want grape ice cream, try buying vanilla ice cream and mixing in some grape soda. Alternatively, you could get an ice cream freezer and try making it yourself; I've put a link to a recipe in the "related links" section.
