A torte is traditionally a multi-layered cake with many layers of filling, and very thin, soft layers of sponge cake. It's very rich, and usually contains cream and ground nuts. Today, torte often refers to any cake that has more than two alternating layers of filling and cake. So, there isn't any hard and fast rule as far as what it should look like.

'un gâteau' is any sort of cake in French. 'Une tarte' is a tart (a very thin and flat cake with a layer of fruit above) and pies are likely to be called 'tourtes'. 'Une tourte' resembles a'tarte' but has an additional layer of dough, to cover the fruits(or the mix of fruits, eggs, veggies, as une tourte may also be a main course and non only a dessert) The two terms are often used somewhat interchangeably, with one or the other given to specific recipes--usually a dessert which includes thin cake-like layers with some kind of creamy or jelly-like filling, along with icing and/or fruit or other toppings. Black Forest dessert is called both a gateau and a torte (and a cake); Sachertorte, on the other hand, is pretty much always called torte. The main idea, though, is that both gateaux and tortes are more than simple cakes.
There are a few ways to tell that a cake is done or a factor that it mgiht be done. 1. Does it look visibily liquidy or still like batter? (If yes, keep baking. If no, see next step.) 2. Have you followed the instruction on the box or recipe for baking time, give or take 5 to 10 minutes? (If no, keep baking. If yes, see next step.) 3. Using a toothpick, poke a part of the cake. Check to see if the toothpick comes out clean. If it does, try another spot. If it comes out with batter on it, the cake is not done. (If all places tested come out clean, the cake is done.)

In a way. Buttering (and hopefully flouring afterwards, which makes it even better) a cake pan acts like a lubricant and reduces the amount of friction that occurs when taking the finished-baked cake out of the pan.
When the cake is golden on top and looks done, stick a toothpick down the center of the cake. If the toothpick comes out wet, your cake needs to bake a little longer. If the toothpick comes out dry, the cake is done. You can also buy a cak testing kit at www.kitchenkrafts.com.
