Because the calf is raised and slaughtered at a young age for that tender meat. In addition to slaughtering at a young age (anywhere from several days old to 35 weeks old), the calves are kept in isolation from other cattle. Generally, they are kept in small crates where their heads are kept in place between metal bars. This restricts their movement and does not allow connective tissues to grow which would make the meat tough. The UK banned veal crates in 1990 and the entire European Union banned them in 2007. Only 5 states in the US have banned veal crates. Veal crates are considered inhumane as they isolate the calves, restrict their movement, and in some cases do not allow them to stand.
