Bubble = They are writing to you (Note the icon might get stuck on bubble and I believe this happens when they leave the cursor in the text field on their end).
Clock = "away". This happens when you send a message to the person and after 1 or 2 minutes, they still haven't read it (they might be doing other things on the BB but that will still count as being "away" as they have not opened your message).
Wavy sign = "unreachable". This happens when your message is not being sent through. Can happen if the person is on a phone call, phone is off, your phone is in a no service area, etc, and hence the message is just not going through at that point.
I don't think there are any other icons to be mentionned, except for the red unavailable icon which is set by the user.
Now to answer your questions... If you close the conversation while the person is "away" or "unreachable", their icon in the contact list will remain that way. Meaning, the only time it will go back to "online" is if you start a new conversation with the person and the person actually receives and reads the message, or if they message you. Closing the message before the person receives it or reads it will make their icon remain the same, and will also put their name in italics in your contacts menu.
