Both brown sugar and refined sugar are from the sugar-cane. As each process is added, the product becomes paler, so that molasses is black, then is often processed again, and on and on; then when that's processed, it's brown sugar, and then reprocessed and is then sold as raw sugar, then again, reprocessing means the final most processed sugar is white, that's refined sugar. The less processed types of sugar are healthier, there's quite a number of different processings done, although all of that is also about extracting. Icing suger (or also called confectioner's sugar) is the most processed of them all, tastes nice but with not much nutritional value. Chocolate has in it: vegetable fat, icing sugar, cocoa and not much else, it's quite possible to make your own chocolate at home. Bon Appetit!
