A single pole switch will break the load but not safely. If you were to work on a 240 volt system with just one leg broken, the voltage from the second hot leg could feed back 120 volts to the ground. If you got between this voltage, a nasty shock could be given. So it for safety reasons that on 240 installations both lines are broken with a two pole switch.
