The design allows more solids to be passed. Also it can be cleared by reversing the water. In a simple eductor, the parts are a nozzle and a housing. The nozzle directs a gas or liquid into what might be called a pipe. The nozzle is parallel to and in the direction of the pipe and desired flow. In the peri jet, they use 6 nozzles arranged in a ring at the edge of the pipe. The flow of water creates what is called a venturi effect. The vacuum created draws water into the pipe. The discharge is the result of the input water and drawn water along with any material that can fit in the pipe (edutor body),
The ejectors are used to maintain a system vacuum in the upstream (Example maintaining the vacuum column pressure) whereas eductor's main objective is to take out the volume of any fluid out of the system by maintaining a system pressure in the upstream.example:1. The eductors are used to remove the air 4 times the volume of the vessel per hour for the vessel entry jobs. We use compressed air as a motive fluid.2. The water jet eductors are used to suck the muddy water, or a oily water from the storm water channel or a pit (an alternative for a de-watering pump). Here the motive fluid is high pressure water.Hence the Eductors can be used to transfer a considerable volume of fluid from low pressure to high pressure with high compression ratio than ejectors. whereas the ejectors just suck the excess volume of the system and maintains the system pressure accurately.The difference is with respect to their function and not with respect with their motive fluid. The diameter of the ejector's throat is lesser than the eductor.
Depending on your pump, you may not be able to convert it. There are three basic kinds of jet pumps for wells. Shallow, Deep and Convertible. In the typical configuration the shallow well pump is the easiest to identify. It should have a single opening (1 1/4" diameter) on the front face. All the pumps will have the discharge on the top of the pump (1 1/4" diameter). The dimensions in parentheses are from my old Montgomery wards 1.5 hp pump to give a reference. The Deep well and convertible pumps will have two openings on the face. Depending on the manufacturer and model they can be big on top or big on bottom. In the deep well installation, the eductor and venturi are usually located within 10' of the water surface during well drawdown. In the convertible installation the eductor and venturi are typically bolted directly to the face of the pump, covering the two holes and providing just the one suction line. Hopefully you have a deep well or convertible type with the eductor and venturi bolted to it. All you have to do is extend the two lines on the front of the pump to the eductor/venturi (within 10-feet of the water surface) and then continue one suction line don into the water and place a foot valve on the end. try going to the pump manufacturer's website and reviewing the installation manual, it should have some good pictures that will point you in the right direction.

Pressure depends on the pool's filtration system pressures. Usually, ozone is drawn in under a vacuum, using an eductor, with the eductor perhaps on a sidestream. Skimmer -> skimmer pump -> ozone addition -> filter with means to allow ozone offgas exit / destruction -> the rest of the normal pool system. The ozone dose depends on bather loading, the amount and type of detritus that could fall in the pool. Applied doses of 1 - 2 ppm are not uncommon. More than that is not unknown but may be required. Pools that use ozone for the sole sterliant I have no experience with, but I expect multiple dosing points, x2 to x5 the amount of ozone, and special piping fittings in the pool.
