Cells swell up in water because they are not isotonic to the solution they are residing in and therefore at equilibrium. For instance the cells in your body become dehydrated when water rushes out of the cell because the concentration is less on the outside (this is the concentration gradient). Solutes move from high to low concentration. Now since the cells are swelling up with water it is because water has rushed into the cell because the concentration was higher on the outside of the cell so it s said that the solution is hypertonic to the cell. In the case of water rushing out it is said that the solution is hypotonic. In addition it is important to know that this affects animal and plant cells differently.
