Basically hard woods are those that grow slowly, because of this the wood is more dense (annual rings are closer together) and the wood is harder. Hardwoods are normally found naturally in trees which grow in arid or harsh conditions where the speed of growth is limited by the amount of water they receive.
Soft woods are produced from trees which grow quickly, or are planted in areas where they grow quicker, this produces a lighter, less dense wood.
Hardwoods are favored for carving and making furniture as they can be carved without chipping or splitting and have more character of the "grain"; softwoods are cheaper because of their speed of growth and are used in construction and mass produced furniture.
