If I remember correctly, 'Jersey Side eggs' are fried sunny-side up, with a hot, soft yolk and the albumen (white part) is crunchy. The reason for the 'crunch' is due to frying 'pork roll' (Taylor Ham) in the pan FIRST -- this adds a distinct flavor to the eggs.
Best served on a 'hard roll' with a slice of American cheese and a slice or two of fried pork roll - butter optional.
Personally, I don't prefer my eggs crunchy. I cook mine with a lid over the pan and flip the egg.

There really isn't a 'gene' for twins. However, fraternal twins are the result of a woman releasing two eggs at a time. This trait can run in the womens side of the family so there is more chance her daughters will release 2 eggs at a time. To date there is no indication that identical twins have any genetic markers. All women have a chance of having their eggs split and having identical twins.
