Vegetables contain all sorts of essential vitamins and minerals in their most natural form. To put it very generally, vegetables are high in vitamin A, vitamin C, vitamin K, B vitamins, manganese, dietary fiber, and also have a decent amount of iron, protein, and other trace minerals.

They also contain compounds known as anti-oxidants, which are known for their anti-cancer properties. Vegetables have inherent anti-inflammatory benefits that help keep the cardiovascular system healthy, and prevent against Heart disease. And they contain phytonutrients, which have all sorts of health benefits.

These high levels of essential vitamins and minerals are concentrated in very few calories, as well, making it an efficient nutritional transport.
