Kernels have a little bit of water inside of them that helps to make them pop. When the kernels begin to cook, the water inside of the kernels will turn into steam and expand the kernels.

Popcorn pops because when u heat it up water inside the kernals evaporates and expands causing the kernal to explode. Old popcorn has less moisture inside of it causing less kernals to pop.
The stuff you pop are the corn kernals. Easy!

There is a naturally occuring variety of pink popcorn kernals (called "strawberry popcorn", due to the colour as opposed to the taste). However I do not know if the kernals remain pink when popped. I have not heard of other naturally occuring colours of popcorn, but I expect you could just throw some food colouring onto regular popcorn and get a decent result.
Corn and hominy are both edible kernals. Nuts also are edible kernals.
