Because they are mutts and not purebred dogs, they get random traits from their parents, and you don't know what they'll look like until the pup is born.

The term "labradoodle" is a contraction of two breeds used to create them: the Labrador Retriever and the Standard Poodle. The term was coined by Wally Conron in 1989 when he first intentionally crossed the two breeds in an attempt to produce a dog with reduced allergens that could be trained to guide the blind. Conron was a breeder for the Royal Guide Dogs Association of Australia at the time. The Association continued its experimentation with the cross but eventually abandoned the project because only 35% were successful in going on to become guide dogs and few of those were actually low allergin producers.
