the coolant goes through the radiator too fast to be cooled sufficiently. a thermostat will help get the engine to operating temp and the let only enough coolant through to keep engine at that temp. this slows coolant down enough to be cooled properly.
Any engine without the thermostat in place will run hotter. Reason is, the thermostat actually slows the flow of coolant so that it will have time to be cooled when it passes thru the rad. The stat also regulates the temp. of the engine and gives a more even temp.

On the 2.4L z24 I think you are talking about the one on top on the driver sid. That is the OUTLET GASKET and it is a rubber O RING.The temp. sensor is screwed into that to detect cooling temp. as it leaves the engine. Coolant leaves the engine to head to the radiator to be cooled.
