Poaching as applies to cooking means to cook something gently in liquid at a very low simmer. Typically this applies to eggs or fish. Poached eggs are cooked in water with some vinegar added to help the egg white solidify quickly. Poached fish is usually done in fish stock or "court bullion" (water that contains lemon and/or wine, parsley, shallots and some herbs like thyme, dill or oregano).

The second definition of poaching that has nothing to do with cooking is;

hunters killing an animal illegally - meaning without permit or on government owned property or reserves. The hunters usually want their meat, fur, teeth, or skins.
