As long as is necessary to complete the job. Unless the person is a minor or there are state laws on point, there are no federal laws limiting the length of a work day. However, the employer is subject to overtime compensation rules if the work week exceeds 40 hours.

Also, while the intake is off you should ask for the thermostat to be replaced and the oil pump drive o-ring as well as this will save you some money down the road. If there is coolant (anti-freeze) in the engine oil, ALL of the lifters should be replaced to prevent tapping noise and reduced power after the job is done.
