It depends on what you like to eat, but some of my personal favorites include:
Kubba Bamya: It is lamb or beef meatballs surrounded by a coating of rice and immersed in a tomato-based broth with ocra and lamb shank.
Samak Masguf: It is a somewhat small fish (usually a little less than pound in weight) that is cut at the bottom, deboned and grilled in a butterflied way with lots of flavorful spices.
Eggplant Stew: There are an incredible variety of different eggplant stews and casseroles with other vegetables and sometimes meat.
Tabeet: a chicken stuffed and broiled with rice, tomatoes, dried apricots and raisins, with a strong cardamom flavor as a central stuffing. Also served over rice.
