The meridian used for reckoning standard time; throughout most of the world the standard meridians are those whose longitudes are exactly divisible by 15°.

In mapping, it is defined as a meridian of a map projection along which the scale is as stated.

The world is round. There's no obviously logical zero point for longitude, so one has to be set, and mostly agreed on, for maps and navigational devices to be useful to everybody. If each nation chose their own zero point (and some do...) then you wouldn't be able to use their maps.
