What is the best mac program to use to write a book?

I would choose a good word processing program, like OpenOffice.Org, and just go from there. Most of the better ones have all the features you need. I recommend OpenOffice because it is open source, and free.

You can also use the famous Microsoft Office program. Many writers also use Adobe InDesign. Some programs are also specialized in parts of the book like PDF Index Generator which helps in creating the book Index.
As you can see there are many options to use, and every one should select the most software to be comfortable with.

There's also a great one called Scrivener that helps you arrange your scenes and chapters as you go along.

This is a matter of opinion. I think most writers go with Microsoft Word for simplicity, but everybody has their favorite.

Two best softwares on market are Quarkxpress and InDesign. I am using InDesign and can tell you that is way better then MS Word for this kind of job. I am telling you from experience because I have published 3 PDF books till now, first was in MS Word written and then next two in InDesign.

iWork '09 is fantastic. well worth the money.

However, there are many applications designed to aid authors using a Mac. The choice would depend on what type of book was planned. A novelist, for example, may choose something like Story Mill from Mariner software.
