There are two basic choices: north and east on I-40 or south and east on I-10 and I-20. Both are about the same distance and take about the same amount of time. It becomes a matter of what you want to see and do along the way. The southern route requires crossing the entire width of Texas and the drive from El Paso to Dallas is particularly barren. I would choose the northern route, preferring stops in Memphis and Nashville over Jackson and Birmingham.
Personally I'd probably use the I-80 route.
