There is no "best" brand. Various brands have strengths and weaknesses, but in the 600cc and 1000cc Range it all comes down to brand loyalty and aesthetics. Yamaha, Suzuki, Honda, etc... They're microns away from each other in quality, thus it is simply which one you like the idea of better. Strictly speaking, Suzuki are tuned more for acceleration, quicker off the line. Yamaha has better top-end speeds, and Honda is known for their stability, comfort, and control. However, that being said, unless you're a track driver you're never going to really experience any of these differences.
My advice? Go to a dealership and sit on each of the bikes, see which one feels the best. Then do you research and get a good deal.

There are many great cruiser bike brands. The most popular brand is Schwinn which is considered the best.
I'd say Honda.
Yes, there is a hybrid Fitness bike from Schwinn that can be used for street use and limited off road use. It can be ordered online and can also be bought in stores like Sport Chek. The local gym also has these available.
One of the best brand for an exercise bike is the Nordic Trac. There are also other different good brands that are available. You would have to visit a store to find out about the other brands.

Progressive Drive is usually the best but there are always variables.
