My 2011 volkswagen Jetta S takes just about 4 quarts of oil when i change it. When the dealership changes the oil they put in 5 quarts and it always measures too high on the dipstick. I've read that a lot of jetta's from 2000 and on take 4.2 quarts.
It might help to specify the engine. Anyway, the first place I'd look for it is behind the timing cover. VW likes to put them there.
