You can buy a new cylinder head for a 1981 VW Rabbit Diesel at most auto part stores. Salvage yards also carry the item.
30mm for the front. I think the rear are 24mm, but I usually use an adjustable for those.

Yes you can . just need to have a donor vehicle that all needed parts can be taken off of . The donor doesn't have to be another Volkswagen pickup, either. Those little trucks are half Rabbit, and the half that's Rabbit is where all the parts you're going to be concerned about in this swap live. So if you buy a rear-ended Rabbit or Jetta, the parts will fit your pickup.

There is no computer on that vintage rabbit. Check the spark at cold and hot. I bet the ignition coil or controller is failing , coils fail at hot.

I don't have a shop manual that goes back that far but on most of the older intake manifolds you will find the fireing order somewhere on top and above each cylinder runner will be a number that says what cylinder it is.
