There are many different versions of Windows XP, and Windows Server.

Windows XP, is mostly used for home machines, mostly (Home Edition).

Windows XP Professional, is mostly used for business machines, used for advanced computing, and can be easily joined to a domain, which is provided by Windows Server.

Windows Server, allows you to "serve" basically. Think about it like this, in some offices without it, they would not be functional. As you could be behind one, and not even know about it. But Windows Server, allows you to do many things like, host websites, in which in XP Pro only (Not Home), you can do but with many limits. (10 concurrent users can visit the site at once, in where Windows Server allows unlimited, or the quota that you specify.) It also allows you to, setup a Domain Controller, as I was speaking earlier, Windows XP Pro machines can join. There are many different flavors for Windows Server, as in Small business, for a small office; Windows Server Enterprise, mostly for larger businesses, or enterprises, but costs a fortune. And finally, there is Windows Server Web, which allows you only to install internet Information Services. Every version of Windows Server comes with DHCP, DNS, IIS, Terminal Services, and much more.... But the only version that only comes with IIS is Windows Server Web; you have to provide your own DNS server and so on.

The main difference between Windows Server 2003 and Windows Vista is that the former is designed for server applications, while the latter was created as an operating system for personal computers. While both are released by Microsoft, they have different features tailored towards their respective intended uses.

Windows Server 2003 is a network-based platform with enterprise-level support and services, such as Active Directory Domain Services, server virtualization and web application development tools. It also includes built-in security and data protection features to reinforce its roles as a secure server OS. On the other hand, Windows Vista has consumer focused features such as Aero Glass UI design elements (which have since been discontinued) media center functionality and enhancements to gaming performance.
