Crumpets are cooked in metal rings, which ensures they have a final height of at least an inch /2.3cm. Piklets on the other hand are normally made from the same batter as crumpets, but cooked without the use of metal rings - the batter is ladelled into small puddles onto a griddle pan. This makes their final height much lower and more like an American pancake.
