I think the difference is that the company is everyone in the musical and the ensemble are those who are not the "main characters"-they don't really have named characters.
For instance the musical HAIR-
the company includes: Berger, Claude, Sheila, Crissy, Jeanie, Hud, Dionne, and Woof. Whereas the ensemble is just the "tribe" (and doesn't include those listed above)

Swing people can learn and perform the parts of several characters in a musical. It is a great way to enhance your skills as a beginning/intermediate performer. Usually, in Equity Theatres, the "swing" person is usually announced prior to the performance, or a little paper insert is inserted in the musical's program, alerting the audience of the casting change.
