The enterotoxins that cause food poisoning can cause gastroenteritis, but gastroenteritis is not necessarily the result of enterotoxicosis. Inflammation of the GI tract is usually associated with colonization by a pathogen. This type of illness could result from pathogens like Shigella, Salmonella, Vibrio cholerae, or Campylobacter establishing themselves in the intestine. The causative bacteria actually invade and damage the intestinal mucosa.
