Class designations denote their roles in the fleet. For example, during WWII, a CV was a regular Aircraft Carrier, a front line fleet combat vessel. CVE's were escort, or Jeep (escort and resupply) carriers that followed the fleet, but were primarily in a support, rather than a fleet combat role, even though they started out as auxiliary vessels and were upgraded to combatants. CVE's were typically relegated to convoy escort duty, and also resupplied fleet carriers with supplies, pilots, and aircraft to replace those lost in combat. CVE's also provide close air support for amphibious landings, while the larger fleet carriers battled the main IJN capital ships in major engagements.
CVE's were similar to CVL's (Light Carriers), though they were much slower, smaller, and had less armor than fleet carriers. Due to the vulnerability of their hulls and minimal magazine protection, CVE's were called "Combustible, Vulnerable, and Expendable" by their crews.
CVL's were essentially converted Cruiser hulls, and though they had the speed to maintain pace with fleet carriers, in reality their narrow decks were unsuitable for aircraft operations. Due to this limitation, CVE's were actually a better ship.

The Saratoga and Lexington were the only two carriers of their class, and they were the largest US carriers of the war, until the ESSEX class came on line. Then there were the Light Carriers classes, and the Escort Carrier classes. Totally more than 50 aircraft carriers during WW2.
