Typically, a stud bolt refers to an un-headed fastener, like a piece of all thread rod. A hex bolt is common a six-sided fastener, available in many grades.
Having 6 points of contact rather than just 4 (for square bolts and nuts) reduces the tendency to damage the nuts by shearing the edges. Of course, square bolts have an advantage if using an alternative tool (pliers, lock-grips) to hold or turn the bolt, because there is a wider surface to grip than with hex bolts.
There are more than two types, but the main categories are flat head and cross/star screwdrivers. Actually, there are four: flathead or standard, phillips head, hex or Allen head, or Torx or star head. Torx/star head and Allen/hex head fasters are more often than not bolts, differentiated from screws, but there are a number of different styles of actual screws that are manufactured for these two bits as well.

Heavy hex head has a larger bearing surface. For example a 1" heavy bolt 1-5/8" dimension across the flats. A finish hex bolt is 1-1/2". This creates a strong fastener. This is one reason many high strength structural bolts like ASTM A325 and A490 are specified a heavy hex pattern. The head thickness is identical for both bolts. These bolts are often found in industrial and steel connection situations. The stronger design is critical.

The only bolts you can't see are the one in between the sump and gearbox. You'll need an extension and socket to fit in the gap. The bolts will be the same as the rest. Either a 10mm hex head or a spline of some sort.
There are really the same thing, just different names. You can curse someone or you can hex them. Both of them are intended to create bad luck or cause bad things to happen to the victim.
If it has the hex bolts, find a hex wrench that is the right size, cut the wrench approx 2 inches long and find a socket that fits the hex. You can attach your torque wrench to the socket. Been there did that.
The lug bolts on a 1996 VW Golf is a M14 x 1.5 thread, with a 17mm hex head.
It depends on the vehicle, some vehicles have star headed bolts, some have just regular hex head bolts different sizes, that hold the caliper over the rotor. All you have to do is remove the two bolts that hold the caliper, and then lift the caliper off of the rotor gently.
