According to the 1999 Ford F-250 Owner Guide :
With engine oil filter change :
The 6.8 liter V10 gasoline engine takes ( 5.7 liters / 6.0 U.S. quarts of 5W-30 )
If you are referring to the diesel engine, its capacity is 15 quarts, but if you are referring to the gasoline engine, the capacity is 6 quarts.

If you're asking if it's possible, then yes. But you would have to replace the computer to fit a 7.3L Powerstroke and change most of your electronics including most of the stuff in your dash. But, if you just want to stay with the 6.8L Triton V10 it's probably an alright choice because that is no doubt the best Triton engine ever built.
That depends on which engine is in it. If it is the 6.0 Powerstroke diesel, the oil capacity is 15 quarts.
