Salt is mainly used as a flavor enhancer in food, but it is also used as a leavening agent in baking, a freezing agent in homemade ice cream churns and as a curing agent (to draw out water from uncooked foods) when making Gravlax or bacon.

If you can get your hands on some fresh Salmon and you like regular smoked lox, I highly recommend making Gravlax. Do a simple Google search for "gravlax recipe" and find one that is to your liking.
