Apples are first peeled, pared, and sliced or chopped. (If the apples are organic, the peel could be left on.) Then they are cooked on top of the stove in a covered saucepan with a little water. When they are soft (about 15 min.), they can be mashed with a potato masher or--for a really smooth applesauce--pureed in an electric blender. You would have to blend them if you left the peel on. Sugar or another sweetener can be added at the beginning or end of the cooking process. The more tart apples such as Granny Smith would need more sweetening. Some people add ground cinnamon.
