I'll take particles to be atoms, for I assume the sample of Gold to be pure.

In that case, the number of atoms in one mole of Gold will be the Avogadro constant, or 6.022142 × 1023.

Gold (the only natural isotope being Au-197) has 79 protons, 118 neutrons and 79 electrons. Of course, protons and neutrons contain quarks and gluons.
