Raw potatoes contain a small amount of fiber, vitamin C, vitamin K, no fat, folate and a few other B vitamins, calcium, iron, potassium, magnesium, copper, manganese and selenium.

However, when potatoes are peeled and cooked, such as in French fries, not only does the saturated fat (solid fat) and sodium increase, but the levels of most of these minerals decrease.

Potatos are a pretty low calorie food option. 1 medium sized potato will have around only 160 calories. They are relatively high in carbs and potassium though. Potatoes tend to be a great source of vitamin C and vitamin B6.
