There is no single answer. Tomatoes and lettuce, for instance, along with some other fruits and vegetables, are not sold frozen.

It has always been a fruit. If it has seeds it is a fruit, if it doesn't it is a vegetable. Only pumpkins are a vegetable classed by everyone but technically they are a fruit.
lettuce Is only true for certain types. There are canned pickled lettuces.
There are possibly several answers. The first one I can think of is Lettuce which I have never heard of being processed. Also what about Mustard Cress or Watercress?

No, people only used to think that the tomato was a fruit, which it is now officially declared not a fruit, but a vegetable. Onions were always, and are always going to be, a vegetable.
Tomatoes are the fruit of the tomato plant-- they contain seeds. However, they are not very sweet , so from a cooking and eating standpoint, they are usually considered as vegetables.
