pH is a measure of the acidity of an aqueous solution (a solution where water is the solvent).
Specifically it is the negative logarithm of the molar concentration of hydrogen ions.
A solution with a pH below 7 is acidic while one with a pH above 7 is basic or alkaline. A pH of 7 is neutral.
Note that pH is not a measure of the strength of an acid or base, just how acidic or basic a solution is, which depends both on the strength and concentration of the acid/base.

There are far too many variable to give an answer to this. The pH will depend on the pH of the water used, the "mint" used, of the soil in which the "mint" was grown, and any additions to the beverage.
