Bull calves are altered or castrated, at which time they are called steers. Steering a bull prevents fighting, accidental breeding with cows and heifer calves, and allows for easier management.

Bull fighters who operate mainly on horseback are called picadors or probably some Spanish word relating to Caballeros ( Horsemen, Knights, cavaliers). In the Portuguese brand of Bull fighting, the Cav boys play a major role and they are called Rejoneadors. REJON ( it does not mean Re-join) is the Portuguese brand of Bull fighting and is more cavalry oriented. I hope this is of some help.
