purpose is to help one to shoot more accurately having a much lighter pull on the triggers. usually, once the gun is cocked, the rear trigger is pulled to the rear until you hear a click then the forward trigger is "set. from that point on a very light touch will fire the gun.
value added will depend if they were factory installed or not.

Winchester records show that rifle as being built in 1896. Value would be the same as any rifle in that configuration built prior to WWII. There is no extra value in that year of manufacture.
