OK...I am feeling old...I grew up eating white spot burgers and then worked as a waitress for a few years. Actually the term "triple O" refers to triple the amount of sauce on the burger which is relish and mayonnaise. Waitresses wrote down on the order pad HB OOO to tell the cook triple sauces. The relish they use is Seinfelds, which you can buy in the store...and actually so are the dill pickles but no garlic. Back in the day white spot had a commissary where they baked the buns daily and made their own mayonnaise.....it was great. The quality of the ingredients made this simple burger wonderful. Unfortunately they are not baking buns and the mayonnaise is now tastes just like store bought....especially on the ferries. I am definitely going to try and make my own mayonnaise just to see if I can recreate it.....maybe even make the buns from scratch!

There is a whole lot of misinformation on the web about Triple O sauce. Here is the closest approximation to it,.... Well actually there are 2 sauces! 1. Red burger relish - simple, just use Bicks burger relish, it's the same thing! 2. White sauce - mix 1 cup Helmans Mayo, 3-4 tsp of water, 1 tsp of honey, 1 tsp ground paprika, quarter tsp ground cayenne pepper, half tsp sugar (optional/to taste), dash of lemon juice, half tsp minced or finley crushed garlic, half tsp White vinegar, 1 tsp tomato puree. Mix well, refrigerate over night and there you have it! Don forget to add some slaw on the side mixed with a little horseradish sauce for the authentic White Spot experience. Hope cracking this recipe makes your Burgers even better!

Buns used to be way better (yeast risen) and they used finely shredded head lettuce which was unique. Bicks red relish no longer exists but Save on Foods brought in another brand from Quebec. My aunt said the burgers were better in the 50's and 60's.

The second time I tried it I used Heinz Ketchup. Much more like I remember it.

I tried the mustard pickle and Heinz chilli sauce that someone else mentioned. Used my food processor to cut the pickle up finely. It tasted very good. For the mayo part, I used Hellmans real mayo + a bit of the mustard sauce from the mustard pickle + a bit of the Heinz chilli Sauce. Tastes great ! I just did a small batch enough for a couple of burgers. I used brioche burger buns which I believe they use in the restaurants but not Triple "O" they are different,
